 Ingredients:

1/2 lb Velveeta cheese, cut into cubes

1/2 lb Asadero, Monterey Jack, or White Cheddar cheese, shredded

1 cup milk

1 can (10 oz) diced tomatoes and green chilies (like Rotel), undrained

1/2 cup white onion, finely chopped

2 cloves garlic, minced

1 jalapeño, finely chopped (remove seeds for less heat)

1/2 tsp ground cumin

1/4 tsp chili powder

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Tortilla chips for serving

Instructions:

    1. Prepare Ingredients: Finely chop the onion, garlic, and jalapeño. Set aside the can of diced tomatoes and green chilies.

    2. Melt Cheeses with Milk: In a medium pot or saucepan, combine the Velveeta and your choice of white cheese with milk. Heat over medium-low heat, stirring frequently until the cheeses are fully melted.

    3. Add Aromatics and Spices: Once the cheese starts to melt, stir in the chopped onion, garlic, jalapeño, cumin, and chili powder. Mix well to combine.

    4. Include Tomatoes and Chilies: Add the undrained can of diced tomatoes and green chilies to the pot. Stir the mixture until it becomes smooth and well incorporated.

    5. Season the Queso: Taste and adjust the seasoning with salt, pepper, or additional spices as needed.

    6. Serve the Queso: Transfer the queso to a serving bowl. Garnish with chopped cilantro. Serve warm with tortilla chips.

Optional Slow Cooker Method: For convenience and to keep it warm for extended periods, consider preparing this queso in a slow cooker. Combine all ingredients in the slow cooker and cook on low until the cheeses are melted and combined, stirring occasionally.

                    Additional Ingredients:

Your choice of sauce (honey mustard, barbecue sauce, ranch dressing, etc.)

                    Lettuce leaves

                    Sliced tomatoes (optional)

                    Pickles (optional)

                    Instructions:

                    Prepare the Biscuits:

                      1. Preheat Oven and Prepare Biscuit Dough: Preheat your oven to 450°F (230°C).
                      2. In a large bowl, whisk together flour, baking powder, baking soda, sugar, and salt.
3, Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
                      4. Add Buttermilk: Make a well in the center of the flour mixture and pour in the cold buttermilk. Gently mix until just combined; do not overmix. The dough should be sticky.
                      5. Form Biscuits: Turn the dough out onto a floured surface. Gently pat it into a rectangle about 1-inch thick. Fold the dough in half over itself and pat it down again. Repeat this process 3-4 times (this helps create flaky layers). Roll out the dough to about 1-inch thickness. Use a biscuit cutter or a glass to cut out biscuits. Re-roll scraps as needed.
                      6. Bake Biscuits: Place biscuits on a baking sheet lined with parchment paper, ensuring they just touch each other. Brush the tops with melted butter. Bake for 12-15 minutes or until they are golden brown.

                        Marinate Chicken Tenders:

                          1. Place the chicken tenders in a bowl and cover with buttermilk. Let them marinate for at least 30 minutes (or overnight in the fridge for more tenderness and flavor).
                          2. Prepare the Chicken Coating: In another bowl, mix together flour, paprika, garlic powder, onion powder, salt, and pepper.
                          3. Fry the Chicken Tenders: Heat oil in a large skillet or frying pan over medium-high heat.
                          4. Take each chicken tender out of the buttermilk, let the excess drip off, then dredge in the flour mixture. Fry the chicken tenders in the hot oil until golden brown and cooked through, about 3-4 minutes per side. Drain on paper towels.
                          5. Assemble the Sliders: Slice each biscuit in half, and place a chicken tender on the bottom half of each biscuit. Add your preferred sauce, and top with lettuce, tomato slices, and pickles if desired.
                          6. Serve: Serve the chicken tender biscuit sliders warm.
